To Resist a Virus, Be Resistant

We recently sent out a post to our readers about various Western and Chinese traditional medicine steps for protecting yourself against COVID-19. In that post we recommended the well known ways, such as hand washing and avoiding crowds, and added some useful tips from Chinese medicine.

Among our recommendations was good nutrition. One excellent way to fortify yourself is with bone broth. Below is a recipe we recommend.

Chicken Bone Broth

Ingredients:

1 lb. ginger, sliced 1-inch thick

4 scallions

2 Cups Chinese rice wine

1 whole organic chicken

Optional: 12 grams Astragalus (found in Asian grocery stores; also called Huang Qi).

1 Tablespoons dried Goji berries

2 Cups fresh wood-ear mushrooms (a dried variety can be found in Asian stores. Fresh can

be found at your local farmer’s market)

One onion, quartered. Skin intact.

Water to submerge ingredients + 3 inches.

To cook:

1) In a big pot bring all ingredients to a boil

2) Skim off the foam and lower the heat

3) Cover and simmer for 2 to 8 hours

4) Discard scallions, onion, ginger, chicken bones & skin, and Astragalus

5) Enjoy the soup with fresh noodles or vegetables with the chicken meat.

6 ) Can be drunk as a broth daily. 6 oz. is a good amount. Use the remaining chicken meat to make chicken salad.
